Vegan Pumpkin Gnocchi

I try making Sam the Cooking Guy’s Pumpkin Sage Gnocchi – but vegan-ized!
If you’ve never had gnocchi (pronounced like “Nyo-kee”), they’re like little pillows made of potatoes, they’re soft and chewy, and you can use them like pasta in a lot of ways.
These vegan gnocchi also cook quickly and go amazingly well with this super simple pumpkin sage sauce, made with just a handful of pantry ingredients.
I was surprised how easy it was to make a vegan version of Sam the Cooking Guy’s pumpkin gnocchi recipe – try it out!
Ingredients
- 1 package gnocchi, cooked according to package directions
- 1/2 yellow onion, diced
- 2 cloves garlic, minced
- 3/4 cup oat milk
- 1/2 cup coconut milk
- 3/4 cup pumpkin purée
- 1 tsp. ground sage
- salt & pepper to taste
- Optional garnishes:
- vegan parmesan, red pepper flakes, fresh basil
