Ingredients
- 6-7 granny smith apples
- 1/3 cup plant-based butter
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 3 Tbsp. coconut cream or coconut milk
- 3 Tbsp. maple syrup
- pinch sea salt
- 2 tsp. vanilla extract
Instructions
- Insert cake pop sticks into the tops of the apples.
- Melt the plant-based butter over medium-low heat in a small saucepan. Add the sugars, coconut cream, maple syrup, and salt.
- Bring to a boil; boil mixture for 7 minutes, whisking occasionally.
- Remove from heat and add vanilla extract; whisk again and let cool slightly for about 15 minutes.
- Twirl each apple in the caramel to coat, spooning extra caramel on top as needed. Chill in the fridge for 30 minutes before serving.
