Recipe 1: Garlic Rosemary Sweet Potato Wedges

Yield: 2-3 servings

Ingredients:

2 cloves garlic, finely minced

1 tablespoon fresh rosemary, finely chopped

1 tablespoon olive oil

1 pound sweet potatoes, chopped into wedges

Salt & pepper to taste

Combine all the ingredients in a large bowl. Transfer to parchment-lined baking sheet. Bake at 425 degrees F for 25-30 minutes, flipping halfway through. Best served immediately.

Recipe 2: Roasted Maple Sriracha Sweet Potatoes

Yield: 2-3 servings

Ingredients:

2 tablespoons maple syrup

2 tablespoons soy sauce

1 teaspoon sriracha sauce

1 pound sweet potatoes, diced

Combine all the ingredients in a large bowl. Transfer sweet potatoes to parchment-lined baking sheet, reserving leftover marinade. Bake at 425 degrees F for 20 minutes. Pour the marinade over baked sweet potatoes, toss to coat, and bake for another 5-10 minutes before serving. Goes great over rice with steamed veggies and tofu or chickpeas.

Recipe 3: Coconut Ginger Sweet Potato Mash

Yield: 2-3 servings

Ingredients:

1 pound sweet potatoes, peeled and chopped into 1-inch pieces

About 1/4 cup full-fat coconut milk

About 1/2 teaspoon ground ginger

Dash salt

1/3 cup chopped pecans, toasted

Steam the sweet potatoes in a covered steamer basket over boiling water for 12-15 minutes until fork tender. Transfer to a large bowl and mash. Add coconut milk, ground ginger, and salt; mash thoroughly. Taste and adjust seasoning/coconut milk as desired. Top with toasted pecans.
